Peppery Coconut Tilapia
- 8 6 oz fish fillets of your choice
- 3 Tbs oil
- 1/2 cup butter, melted
- 3 Tbs orange juice
- 2 Tbs lemon juice
- 2 tsp garlic powder
- 2 tsp ginger, minced
- 2 tsp red pepper flakes
- 1 cup plain bread crumbs
- 1 1/2 cup unsweetened coconut
- CHUTNEY SAUCE
- 1 cup mayonnaise
- 1/4 cup prepared Chutney
- 1 Tbs lemon juice
- 1 tsp curry powder
- Heat oven to 425 degrees. Oil or spray a 13x9 baking dish. Place a rack in the dish. When baking, this rack allows heat/air to reach all sides of the fish.
- In a flat bowl, mix butter and next five ingredients. In another bowl combine coconut and bread crumbs. Dip fish in butter mixture and then coat with crumb mixture. Place fish on rack in the prepared baking dish.
- Bake 15 - 20 minutes or until fish is golden brown and flakes easily.
- Serve with Chutney sauce.
- CHUTNEY SAUCE
- Mix all ingredients a couple hours before serving. This gives the flavor time to develop.
