Cajun Shrimp Casserole
- 2 c. shrimp, peeled and deveined
- 3 Tbsp. butter
- 3/4 c. chopped celery
- 1/4 c. chopped bell pepper
- 1/4 tsp. mace
- 1/4 tsp. curry powder
- 1/4 tsp. Louisiana hot sauce
- 1/4 tsp. paprika
- 4 green onions, sliced
- 3 Tbsp. flour
- salt to taste
- 2 tsp. Worcestershire sauce
- 1 (3 oz.) can evaporated milk
- 1/4 c. grated Parmesan cheese
- In heavy skillet, melt butter; saute celery, pepper and onions for 7 minutes stirring constantly.
- Add flour, salt, mace, curry powder, hot sauce and Worcestershire sauce, stirring until well blended.
- Stir in milk.
- Cook, stirring constantly, until sauce is smooth and thickened.
- Add shrimp; cook about 3 minutes.
- Pour into a buttered 6 x 10-inch casserole.
- Sprinkle with Parmesan cheese and paprika.
- Bake 20 minutes at 425u0b0.
