Broccoli Chicken Casserole
- 1 (10 oz.) box chopped broccoli, cooked and drained
- 4 whole chicken breasts, cooked
- 2/3 c. mayonnaise
- 1 (10 oz.) can cream of chicken soup (undiluted)
- 1 (10 oz.) can cream of celery soup (undiluted)
- 1/2 c. evaporated milk
- 1 Tbsp. lemon juice
- 1/2 c. sharp Cheddar cheese, shredded
- 1/2 tsp. curry powder
- 1 c. stuffing mix
- 1/2 c. margarine
- Cook and drain broccoli, put into 1 1/2-quart casserole dish. Top with chicken that has been removed from the bones.
- Mix the mayonnaise, both soups, evaporated milk, lemon juice, cheese and curry powder.
- Pour this over the chicken and broccoli.
- Mix stuffing mix with margarine (melted) and sprinkle this on top of the casserole.
- Bake at 350u0b0 for 30 minutes.
