Grilled Herbed Mahi Mahi (Or Swordfish)
- SPICY HERB RUB
- 1/4 cup dried parsley
- 2 tablespoons dried thyme
- 2 tablespoons dried marjoram
- 1/2 teaspoon salt
- 1/2 teaspoon crushed red pepper flakes
- FISH
- 1 1/2 lb. mahi mahi fillets
- 1 tablespoon olive oil
- 1 tablespoon fresh lemon juice
- 1. Heat grill. In small bowl, combine
- all rub ingredients; mix well. Brush
- mahi mahi with oil; place in shallow
- baking dish. Pat rub onto both sides
- of fish, using a total of 2 tablespoons
- of rub. Cook fish immediately or chill 30 minutes to allow flavors to blend.
- 2. When ready to grill, place fish skin side up on grill over medium-high heat.
- 3. Cook 8 to 10 minutes or until fish
- just begins to flake, turning once. Sprinkle with lemon juice before serving.
