Smoked Cheese Squares
- 2 medium onions, thinly sliced
- 1 tbsp. butter
- 1 tbsp. olive oil
- 1 tbsp. brown sugar
- 1 tbsp. balsamic vinegar
- 1/4 c. pitted dates, snipped
- 1/4 c. pinenuts or slivered almonds
- 1/2 c. shredded mozzarella (2 oz.)
- 1/2 c. shredded smoked gouda (2 oz.)
- 1/2 c. smoked cheddar (2oz.)
- 1 16oz. Italian bread shell (Boboli) thin crust
- Preheat oven to 450 deg.
- In a large skillet, cook onion in butter and oil over medium heat for 10 min., stirring occasionally. Stir in sugar, vinegar and dates. Cook and stir 5 min. more or until onions are golden brown.
- Remove from heat. Stir in nuts. In a bowl, combine cheeses. Sprinkle evenly over bread shell. Top with onion mixture. Place bread shell on an ungreased baking sheet. Bake for 8 min. or until cheese is melted. Let stand for 5 minutes before cutting into 2" squares (or cut into wedges for indiv. servings.)
