Yule Cake
- 1 1/2 c. brazil nuts
- 1 1/2 c. walnuts
- 1 c. dates
- 1/2 c. raisins
- 2 pkg. candied pineapple
- 1/2 c. red maraschino cherries, drained
- 1/2 c. green maraschino cherries, drained
- 3/4 c. flour
- 3/4 c. sugar
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 3 eggs
- 1 tsp. vanilla
- Grease 9 x 5 x 3-inch loaf pan and line with waxed paper and then grease the waxed paper.
- Place nuts and fruits in large bowl. Measure dry ingredients and sift together.
- Then sift over the fruit mixture and mix well.
- Beat eggs in bowl until light, add vanilla.
- Blend with fruit mixture.
- Spoon in loaf pan.
- Bake at 300u0b0 until lightly browned.
- After baking cool 10 minutes.
- Take from pan and cool.
- Brush with apple cider.
