Texas Sheet Cake With Coffee Fudge Icing
- CAKE:
- 1 cup water
- 2 cups sifted flour
- 2 cups sugar
- 1 cup margarine or butter (2 sticks)
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 2 eggs
- 4 HEAPING tablespoons cocoa powder
- 1/2 cup sour cream
- ICING:
- 1 1/2 cups confectioners sugar
- 3 tablespoons cocoa
- 1/4 cup melted butter
- 3 tablespoons hot coffee
- 1 teaspoon vanilla
- Combine butter, water, and cocoa in a 2 quart saucepan and heat until boiling, stirring occasionally.
- Remove from heat and pour into the mixer bowl.
- Add flour, sugar, and salt, and beat until mixed very well.
- Add sour cream, baking soda, and eggs and mix until well blended.
- Pour into a greased 10"x15" pan.
- Bake at 375' for 22 minutes (or 30 min for a 9"x11" pan).
- While the cake is baking, make the icing!
- Mix together all ingredients in mixer and let it stand to thicken.
- Spread icing over the cake while hot.
- Depending on what you prefer, either let it sit out, or, as I like it, store it in the fridge to eat it cold!
