Prune Cake
- 1 1/2 c. prunes, torn into small pieces
- 1 1/2 c. sugar
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/3 c. shortening or margarine
- 1 tsp. nutmeg
- 1/4 tsp. lemon extract
- 2 egg yolks (use whites for boiled icing)
- 1/2 c. nuts (pecans or walnuts)
- 1 1/2 c. flour
- 1 tsp. baking powder
- 5 Tbsp. buttermilk
- 1 tsp. cinnamon
- 1 tsp. cloves
- 1 whole egg
- Cream shortening and sugar.
- Add egg yolks, buttermilk, prunes and
- nuts.
- Mix
- flour,
- spices, baking powder, baking soda and salt
- and
- add to other mixture.
- (If too stiff, add more buttermilk.)
- Pour into greased and floured pans (either two 9-inch
- pans
- or
- one
- 9
- x
- 13-inch
- pan).
- Bake about 25 minutes at 350u0b0 or until tester comes out clean.
