Tomato Quiche
- 1 deep dish pie shell
- 2 large ripe tomatoes (1/2-inch slices)
- 1/2 c. sliced ripe olives
- 2 Tbsp. minced onions
- 1 c. grated Swiss cheese
- 1/2 lb. hot sausage
- 1 c. grated Cheddar cheese
- 2 eggs, slightly beaten
- 1 c. half and half
- Fry 1/2 pound hot
- sausage.
- Blot
- grease.
- Set
- aside. Bake pie shell for
- 8
- minutes
- at 425u0b0.
- Set aside.
- Dip each tomato slice
- in
- 1/4
- cup flour seasoned with salt and coarse pepper. Saute
- tomatoes quickly in 2 tablespoons cooking oil. Set aside. Arrange
- 1/2
- cup
- sliced olives and 2 tablespoons minced onions in bottom of cooked pie shell.
- Add the following
- ingredients
- in layers:
- Swiss
- cheese, sausage, Cheddar cheese, tomatoes.
- Stir together 2 slightly beaten eggs and 1 cup half andtalf.
- Pour over mixture and bake at 375u0b0 for 45 minutes.
- Cool 5 minutes before cutting.
