Mom'S Comort Casserole Aka Rice And Veggie Casser
- 1 1/2lb zucchini, shredded
- 2 carrots, shredded
- 1 head broccoli florets
- 2 medium onions, chopped or shredded
- 1 c brown rice
- 2 c cheddar cheese, grated
- 1 tsp salt or to taste
- 1/2 tsp pepper
- 1 T dried basil
- 3 eggs, just blended
- 1/2 c mayo (I use lite mayo)
- bread crumbs - plain or seasoned
- 1T butter or margarine
- parmesan cheese to cover
- Shred zucchini, carrots, onion and add broccoli florets to vegetable steamer and steam for 20 minutes or until tender.
- In the meantime, prepare rice according to the package directions.
- In a 2 quart casserole mix together the last 6 ingredients.
- Add steamed vegetables and cooked rice and mix with mayo and cheese mixture. Adjust seasoning.
- Sprinkle bread crumbs over top; dot with 1T butter and grate parmesan cheese over top.
- Bake 350 for 1 hour.
