Squash Oobleck
- 4 cups cooked Butternut squash, mashed
- 1 Tbs. olive oil
- 1 cup chopped onion
- 1-1/2 cups chopped mixed red & green peppers
- 1-2 Tbs minced garlic
- 1 tsp. ground cumin
- 1/2 tsp. ground coriander
- 1/2 tsp. chili powder
- 1/4 tsp. cayenne
- 1/4 tsp. freshly ground black pepper
- 1 tsp. coarse sea salt
- 2 cups sweet corn, fresh or frozen
- 4 beaten eggs
- 1 cup grated very sharp cheddar
- 1) Saute onions in olive oil until translucent, add spices and garlic. Add peppers and salt. Cover & cook 5 minutes.
- 2) Add saute to mashed squash, along with corn and beaten eggs. Mix well.
- 3) Spread into a buttered 2-quart casserole and top with cheese.
- Bake in 350 degree oven, 20 minutes, covered; 15 minutes, uncovered.
