Squash Oobleck

  1. 1) Saute onions in olive oil until translucent, add spices and garlic. Add peppers and salt. Cover & cook 5 minutes.
  2. 2) Add saute to mashed squash, along with corn and beaten eggs. Mix well.
  3. 3) Spread into a buttered 2-quart casserole and top with cheese.
  4. Bake in 350 degree oven, 20 minutes, covered; 15 minutes, uncovered.
