Sonya'S Healthy Salmon

  1. Put first three ingredients in a shallow pan. Add salmon filets and allow the salmon to refresh in the ice water bath for 10 minutes. Remove salmon and pat dry with a paper towel.
  2. On the meat side of the salmon, add salt, pepper, dill and fennel. Cover the salmon with the brown sugar and pack it down using the back of a spoon, covering the entire meat side of the salmon.
  3. In large oven proof skillet, heat the olive oil over medium heat. When oil reaches moderate heat, add salmon filets meat side down. Sear the salmon for two minutes. Carefully turn salmon over (meat side up), transfer to a preheated 400 degree oven and bake for 10 - 15 minutes.
