Red Cucumber Pickles(Mock Apple Rings)

  1. Peel, core and slice cucumbers 1/2-inch thick.
  2. Take 1 gallon water and 1 cup lime; mix well and pour over cucumbers in churn. Let stand 24 hours.
  3. Drain.
  4. Wash 3 times.
  5. Drain.
  6. Cover with ice and let stand 3 hours.
  7. Drain.
  8. Take 1 cup white vinegar, red cake coloring, alum and enough water to cover.
  9. Simmer for 2 hours. Drain.
  10. Throw this liquid away.
  11. Take 4 cups white vinegar, cinnamon sticks, sugar, 4 cups water and red hots.
  12. Boil for 40 minutes.
  13. Pour over cucumbers and let stand overnight.
  14. Next morning, drain and heat liquid until hot.
  15. Pour over cucumbers and let stand again.
  16. Third morning, heat in pan for a few minutes until hot and put in jars and seal.
