Red Cucumber Pickles(Mock Apple Rings)
- 7 lb. large cucumbers
- 1 c. lime
- 1 c. white vinegar
- 1 Tbsp. alum
- 1 box cinnamon sticks
- 4 c. water
- 1 gal. water
- ice
- 1 bottle red cake coloring
- 4 c. white vinegar
- 10 c. sugar
- 2 boxes red hots
- Peel, core and slice cucumbers 1/2-inch thick.
- Take 1 gallon water and 1 cup lime; mix well and pour over cucumbers in churn. Let stand 24 hours.
- Drain.
- Wash 3 times.
- Drain.
- Cover with ice and let stand 3 hours.
- Drain.
- Take 1 cup white vinegar, red cake coloring, alum and enough water to cover.
- Simmer for 2 hours. Drain.
- Throw this liquid away.
- Take 4 cups white vinegar, cinnamon sticks, sugar, 4 cups water and red hots.
- Boil for 40 minutes.
- Pour over cucumbers and let stand overnight.
- Next morning, drain and heat liquid until hot.
- Pour over cucumbers and let stand again.
- Third morning, heat in pan for a few minutes until hot and put in jars and seal.
