Black Bean - Hominy Chili
- 4 cups veg broth
- 1 can 14.5 oz can petite Diced tomatoes
- 1 tbs oil
- 1 onion diced
- 1 pepper diced
- 1 jalopeno (optional)
- 3 tbs chili powder (mix in some ancho chile)
- 1 tsp each cumin and oregano
- 2 cans drained Black Beans
- 2 cans drained hominy
- 3 large garlic cloves
- 1 oz bittersweet chocolate
- 1/4 cup chopped fresh cilantro
- In dutch oven: Add onions and peppers to oil, suate unitl soft and golden brown (5 minutes).
- Add spices, saute till fragrant.
- Add beans and hominy along with tomatoes and broth.Bring to simmer, reduce heat to low and simmer partially covered until vegetables are tender and flavors have blended. (20 minutes)
- Stir in garlic, chocolate and cilantro, simmer for a couple of minutes to blend flavors.
- Turn off heat, let stand for a few minutes. Add seasonings (salt and pepper) to taste.
