Ginger Spice Cookies _ Gluten Free
- 1 C grown rice flour
- 1 C rye flour (or gluten free flour)
- 1 t baking soda
- 1 t baking powder
- 1 t ground ginger
- 1 t cinnamon
- 1/4 t ground cloves
- 1/4 t salt
- 1/2 C coconut oil, warmed to a liquid consistency
- 1/4 C maple syrup
- 1/4 C honey
- 1 egg
- 2 C old-fashioned oats
- 1. Sift together the first 8 ingredients and set aside.
- 2. In an electric mixer on low speed: mix the oil, syrup, honey and egg until smooth.
- 3. With mixer running, gradually add the dry ingredients (except oats) to the wet.
- 5. Using a spatula, gradually fold in the oats.
- 6. Spoon onto oiled baking sheet.

- Bake for 8 minutes or until lightly golden.
