Rancho Torro Grande Stew (Big Bull On The Farm)
- 1tbsp oil (evoo)
- 3 lbs Stew meat
- 1 onion chopped
- 1 bell peper chopped
- 1 garlic toe chopped(or more)
- 2 stocks celery chopped
- 1 bay leaf
- 2 tsp Thyme
- 1 pack Sazon
- 5 Dried cascabel Pepper
- 1 cup beef stock or broth(low sodium)
- 1 can tomatoes
- 1 can black beans
- salt and pepper to taste.
- Heat oil in large pot or skillet. Brown meat first, then add bell pepper. onion, celery and garlic. Cook for 5 min. Then add the rest of the ingredients, stir well and bring up to a boil. Then reduce to a simmer and cook for 4 hours. Leave lid on for the first 3 hours then remove for the lid the last hour.
- This stew is great left over and made into enchiladas, top with cheese YUMMY!! Please be creative and play with your food. If you have any question please ask!! This will kindly feed a family of 4, you can stretch it for 6. Double it and freeze it. Instant meal
