Fancy Baked Apples
- 12 tart apples
- 2 1/2 c. tiny Amaretto cookies, crushed (not pulverized)
- 1/2 c. slivered almonds
- 1 stick butter, at room temperature
- 1 1/2 c. sugar (brown or white)
- 1 c. dry white wine
- 1 1/2 c. water
- 1 c. heavy cream, whipped
- mint leaves
- crystallized fruits
- Preheat oven to 400u0b0.
- Wash and core apples, taking care not to pierce the bottoms.
- Prick skins every inch or so with the tip of a sharp knife.
- Mix cookies and almonds with butter and pack into apples.
- Place apples in baking dish and sprinkle 1 tablespoon of sugar over each.
- Add wine and water to the pan. Place pan on upper shelf of oven and bake for 45 minutes.
- Transfer apples to serving or storage dish.
- Pour pan juices into saucepan. Simmer over high heat until juices have become syrupy.
- Pour over apples.
- Apples will keep in the refrigerator for 3 days.
