Polynesian Pork
- 2 lb. pork tenderloin, cut in strips
- 2 Tbsp. margarine
- 1 (13 1/2 oz.) can pineapple tidbits
- 1/2 c. bottled Russian dressing
- 1/4 tsp. salt
- 1 1/2 Tbsp. soy sauce
- 1 tsp. vinegar
- 3/4 c. water
- 2 Tbsp. cornstarch
- 1 medium green pepper, thinly sliced
- 1/2 c. onion rings
- Chinese noodles or hot, cooked rice
- Cook pork in margarine until brown; drain.
- Drain juice from pineapple and reserve.
- Combine juice with Russian dressing, soy sauce, vinegar and salt.
- Mix cornstarch with water and add to juice mix.
- Pour over meat.
- Cook, stirring, until sauce has thickened.
- Cover.
- Simmer for 1 hour.
- Add green pepper, onion and pineapple.
- Simmer 15 minutes.
- Serve over noodles or rice. Serves 6 generously.
