Grown Up Mac And Cheese
- 1/4 lb unsalted butter
- 1/2 c garlic chopped
- 1/2 c flour
- 5 c whole milk warmed
- 1/2 lb goat cheese
- 1 T salt
- 2 t black pepper
- 1/2 t nutmeg
- 2 lb pasta
- 4 qts water
- 1 T salt
- 1/4 c olive oil
- 1/2 lb swiss cheese, grated
- 1/2 lb blue cheese, crumbled
- 1/2 lb sharp cheddar cheese, grated
- 1/2 lb fontina cheese, grated
- 1/2 c shredded parmesan
- preheat oven to 350 degrees
- Melt butter in 4 qt sauce pan over medium heat. Add garlic and cook slowly, about 5 min.
- Add flour and stir often for 5 mins. Add milk and cook until milk reaches consistency of heavy cream.
- Crumble in goat cheese and stir until dissolved. Add salt, pepper and nutmeg.
- Pasta; Bring water, salt and olive oil to boil. Add pasta, cook until al dente. Drain and put in large mixing bowl.
- Pour thickened goat/milk mixture over pasta and stir. Add the rest of the grated cheeses and mix well.
- Butter a 13x9 baking dish or 3 qt dish . Pour pasta in dish and top with parmesan. Bake for 30 min.
