Fiesta Casserole
- 1 1/2 c. shredded Mozzarella cheese
- 8 oz. bow tie noodles
- 1 (10 oz.) pkg. frozen spinach, thawed
- 1 1/2 lb. ground beef
- 1 medium onion, chopped
- 1/2 c. picante sauce
- 1 (15 oz.) can tomato sauce
- 1 tsp. salt
- 1/2 tsp. oregano
- 1 (8 oz.) can corn, drained
- Cook and drain noodles.
- Squeeze dry and chop spinach.
- Brown ground beef and drain.
- Add picante sauce, onion, tomato sauce, salt and oregano; mix well.
- Bring to a boil.
- Reduce heat and simmer 1 minute.
- Remove from heat and mix in noodles.
- Place 1/2 mixture into 13 x 9 baking dish.
- Cover with spinach.
- Top with remaining mixture.
- Sprinkle with corn.
- Bake at 375u0b0 for 25 minutes.
- Cover with cheese and bake until cheese is melted. Garnish with sour cream.
- Makes 8 servings.
