Sour Cream Enchilada Casserole
- 1 lb. ground beef
- 1/2 medium onion, chopped
- 1 tsp. cumin
- 1/2 c. jalapeno relish or salsa
- 1 Tbsp. flour
- 1 c. grated cheese
- 2 tsp. chili powder
- 1/2 tsp. garlic powder
- 1/4 c. butter
- 3/4 c. milk
- 1 c. sour cream
- 6 corn tortillas
- Brown meat and drain off excess fat.
- Combine onion, spices and relish with meat; set aside.
- Make white sauce by melting butter in a skillet, stirring in flour, then milk.
- Bring to a boil or heat until thick.
- Remove from heat and stir in sour cream.
- Grease a casserole dish and prepare 2 layers like this: three tortillas in pieces, 1/2 the sour cream sauce, 1/2 the meat mixture and 1/2 cup grated cheese.
- Repeat these layers.
- Bake at 375u0b0 for about 20 minutes.
- Remove from oven and let set 20 minutes before serving.
