Garlic Shrimp Skewers
- 2 1/2 dozen large shrimp
- 1/2 cup parsley, chopped
- 1/2 cup olive oil
- 1/4 cup butter or margarine, melted
- 1 cup toasted bread crumbs
- 5 cloves garlic, minced
- 1/4 tsp salt
- 1/4 tsp pepper
- 3/4 tsp dried red chile flakes
- 1/2 cup grated Parmesan cheese
- 2 lemons
- 10 skewers
- 1. Peel, devein and put three shrimp on each skewer. Slice lemons to about a 1/8 inch thick and lay them in the bottom of the baking pan.
- 2. Arrange skewers over lemon slices in a 13 x 9 baking dish so that the skewers don't overlap.
- 3. Drizzle with olive oil. In a bowl, mix bread crumbs, garlic, parsley, chile flakes, salt and pepper. Sprinkle half of mixture over the shrimp, then cover and bake for 15 minutes at 300 F.
- 4. Flip skewers over, drizzle butter over shrimp and sprinkle on the remaining bread crumbs and grated cheese.
- 5. Return dish to oven uncovered and bake another 5-10 minutes, or until cheese is melted.
