Garlic Shrimp Skewers

  1. 1. Peel, devein and put three shrimp on each skewer. Slice lemons to about a 1/8 inch thick and lay them in the bottom of the baking pan.
  2. 2. Arrange skewers over lemon slices in a 13 x 9 baking dish so that the skewers don't overlap.
  3. 3. Drizzle with olive oil. In a bowl, mix bread crumbs, garlic, parsley, chile flakes, salt and pepper. Sprinkle half of mixture over the shrimp, then cover and bake for 15 minutes at 300 F.
  4. 4. Flip skewers over, drizzle butter over shrimp and sprinkle on the remaining bread crumbs and grated cheese.
  5. 5. Return dish to oven uncovered and bake another 5-10 minutes, or until cheese is melted.
