Meat Loaf Braccioli
- 1 pound ground beef
- 1/2 pound ground pork
- 1 can (4 ounces) sliced mushrooms,
- water
- 1 egg
- 1/4 tsp garlic powder
- 1/2 tsp salt
- 4 strips of bacon
- 1 tsp dried parsley flakes
- 1/2 tsp oregano
- 1/2 tsp of dried basil
- 1/2 tsp dried thyme
- 1/2 cup bread crumbs
- 1/2 cup diced white onion
- 1 cup mozarella shredded
- 1 can tomato or spaghetti 16 ounces
- 1. Drain mushrooms saving juice in measuring cup.
- 2. Add water to make 1 cup of liquid
- 3. in bowl combine beef, pork, bread crumbs, egg, mushroom liquid, garlic powder and salt. Mix well, cover and refrigerate until ready to use
- 4. Fry bacon until crisp. Drain fat and save for later. Crumble bacon
- 5. Remove meat mixture from refrigerator. On large sheet of wax paper, pat meat mixture into a 12 x 8 rectangle. Will be relatively thin
- 6. Drizzle 2-3 tsp of bacon fat over meat.
- 7. Mix spices and sprinkle over meat. Do the same with the bread crumbs
- 8. Leaving a 1/2 inch border all around the meat, scatter bacon, onion, mushrooms and cheese.
- 9. Starting at one of the narrow ends, roll up the meat, pressing meat as necessary to contain the filling.
- 10. Put in 13x 9 x 2 dish and cover with sauce.
- 11. Bake for 50-60 mintues.
