Garbage Can Spaghetti Sauce
- 500 g ground beef, buffalo, or moose
- 1 onion, chopped
- 3 or 4 garlic cloves, minced
- Whatever veggies you need to get rid of in the fridge (green peppers, celery, carrots, zucchini, etc..), chopped
- 1 14-oz. can tomatoes or 3 or 4 chopped fresh ones
- 1 can tomato sauce
- 1 can tomato paste
- 2 tbsp basil (or 1/4 c. fresh basil)
- 2 tbsp oregano
- 1 to 2 tbsp chili powder
- 1/4 to 1/2 tsp cayenne powder
- 1/4 tsp cloves
- 1/4 tsp cinnamon
- 1 tbsp cocoa
- 1 bay leaf
- salt and pepper
- saute ground meat until brown.
- add veggies and saute until onions are translucent and other veggies are softened (but not mushy)
- Add tomatoes, tomato sauce and tomato paste. Stir until mixed and heated through.
- Add all spices and simmer for 20 minutes, adjusting spice balance as desired.
