Beef Satay
- basting sauce:
- 3/4 C coconut milk
- 3 tbsp. dark brown sugar
- 3 tbsp. fish sauce
- 3 tbsp. vegetable oil
- 3 shallots
- 2 stalks lemon grass
- 2 tbsp ginger
- 1 and 1/2 coriander
- 3/4 tea red pepper flakes
- 1/2 tea cumin
- 1/2 tea salt
- Beef marinade:
- 2 tbsp vegetable oil
- 2 tbsp dark brown sugar
- 1 tbsp fish sauce
- steal 1 3/4 lb. cut into cubes
- Peanut dipping suce:
- 1 tbsp veg oil
- 1 tbsp red curry paste
- 1 tbsp brown sugar
- 2 garlic cloves
- 1 C coconut milk
- 1/3 C peanut buter
- 1/4 roasted unsalted peanuts
- 1 tbsp lime juice
- 1 tbsp fish sauce
- 1 tbsp soy sauce
- Beef:
- whisk together marinade and marinate for at least 30 min., girl over hot heat, basting with basting sauce
- Peanut sauce:
- Heat oil, add curry paste, sugar, garlic, cook for 1-2 min.
- Add coconut milk, simmer
- whisk in peanut butter until smooth
- Remove from heat, sir in lime juice, fish sauce, soy sauce, peanuts
