Jen'S Lemon Bars
- 1 cup melted butter
- 1 cup powdered sugar (plus some for dusting the finished squares)
- 4 eggs
- 2 cups sugar
- 1 teaspoon baking powder
- 2 cups flour (I use Bob's Red Mill 1 to 1 gluten free)
- 4 tablespoons flour for lemon filling
- 1 tablespoon zest of one lemon
- 6 tablespoons freshly squeezed lemon juice (zest the lemon before cutting and juicing!)
- Preheat oven to 350
- Line 9x13 pan with parchment paper
- combine melted butter, 2 c flour and 1 c powdered sugar in a bowl and mix just until it comes together. Press into the prepared 9x13 pan all the way to the edges. Bake 15-20 minutes or until golden brown.
- While crust is baking, combine eggs, 2 c sugar, baking powder, 4 T flour, lemon juice and lemon zest in a large bowl. Whisk until smooth. When crust is ready and still warm, pour filling into pan and return to oven.
- Bake until filling is set and slightly brown on top, 20-30 minutes.
- Remove from oven and allow to cool before dusting with powdered sugar and cutting.
