Red Hot Green Apple Cake
- 3 cups green apples (I cut them in mixed sizes, fine to medium)
- 1 cup very cold butter
- 2 cups sugar
- 3 cups flour
- 1 tsp ground cloves
- 2 tsp pumpkin spice
- 2 tsp cinnamon
- 1/4 to 2 tsp red pepper(I use about 1 tsp)
- 5 eggs
- 1 heaping tsp baking powder disolved in 1/2 cup cold water
- Cut butter and sugar together, this is sometimes not easy because the butter is hard, work at it untill there is no loose sugar.
- In another bowl whisk together flour and spices, add apples, stir to coat. add eggs one at a time this will be very thick. then add baking powder.
- Fold batter into butter sugar mixture ( it will look a clumpy mess, but it is sooo good)
- Put into a greased and floured(I use the spray) 13x9x2" cake pan. Bake for 30 min @ 350 then cover with foil and lower temp to 300 and bake another 15 to 20 min. untill set. Glaze with Red Hot Green Apple Glaze while still hot. ( see recipe in my recipe box ) Serv Hot, Room Temp or cold
