Popcorn Cake Delight
- 8 c. freshly popped popcorn, unsalted
- 3/4 c. sugar
- 3/4 c. finely packed brown sugar
- 1/2 c. light corn syrup
- 1/2 c. water
- 1 tsp. vinegar
- 1/4 tsp. salt
- 3/4 c. butter or margarine
- 1 c. candy coated chocolate pieces
- 1 c. Spanish peanuts
- 1 c. miniature marshmallows
- Place popcorn in a large bowl and set aside.
- Combine sugar, syrup, water, vinegar and salt in a large saucepan.
- Cook over medium heat, stirring frequently, until mixture reaches hard ball stage (260u0b0). Remove from heat. Add butter, stirring until butter melts.
- Pour syrup in a thin stream over popcorn, stirring until popcorn is evenly coated.
- Stir in remaining ingredients and mix well.
- Press mixture into a well-greased 6-cup ring mold.
- Cool. Unmold on serving plate.
