Calypso Pie
- 18 to 20 Oreo cookies
- 1/4 c. softened butter
- 3 oz. unsweetened chocolate
- 1/4 c. butter
- 2/3 c. sugar
- 1/8 tsp. salt
- 2/3 c. evaporated milk
- 1 tsp. vanilla
- 3 drops almond extract
- 2 pt. chocolate or coffee ice cream, softened
- 1 pt. chilled whipping cream
- 2 Tbsp. sugar
- 1 tsp. vanilla
- 1 c. chopped nuts
- Crush Oreo cookies in bowl.
- Blend in softened butter.
- Put in pie plate and chill 2 hours.
- Melt unsweetened chocolate and butter in top of double boiler.
- Remove from heat.
- Stir in 2/3 cup sugar and salt until blended.
- Gradually add evaporated milk and blend well.
- Return to heat, stirring constantly for 4 minutes.
- Remove from heat.
- Stir in vanilla and almond extract.
- Cool and chill for 1 hour.
