1St Grade Pumpkin Bread
- WHOLE BATCH
- 3 1/2 c flour
- 2 c sugar
- 2 tsp baking soda
- 1 tsp salt
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1 c oil
- 1/2 c water
- 4 eggs
- 2 c pumpkin (canned is just fine!)
- 1 tsp vanilla
- HALF BATCH
- 1 1/2 c flour
- 1 c sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/3 c oil
- 1/4 c water
- 2 eggs
- 1 c pumpkin (canned is just fine!)
- 1/2 tsp vanilla
- PREHEAT oven to 350.
- Sift together the dry ingredients (flour, sugar, baking soda, salt, cinnamon, nutmeg).
- In another bowl, mix the remaining ingredients (oil, water, eggs, pumpkin, vanilla).
- Blend the dry ingredients into the wet ingredients.
- Bake in a 350 degree oven.
- Loaf pan: 50-60 minutes
- Muffins: 20 minutes
