Mom'S Cheesecake
- 1 Graham Cracker Crust (purchased or make your own)2 8-ounce pkgs. real Cream Cheese
- (don't use the low fat version)
- 1 Pint Sour Cream
- 2 large Eggs
- 3/4 Cup, plus 2 Tblspns. granulated Sugar
- 2 Tblspns. plus 1/2 tsp. Vanilla Extract
- In mixing bowl combine the cream cheese, eggs and blend. Then add in 3/4 cup of sugar and 2 tablespoons of vanilla extract and blend until smooth. Pour into the prepared pie crust and bake at 350 degrees for 20-30 minutes. Set aside to cool.
- Mix together sour cream, remaining 2 tablespoons of sugar and 1/2 teaspoon vanilla extract. Pour this mixture over the top of the baked cake and return cake to oven for 10 minutes. Cool down, then refrigerate for at least 3 hours before slicing.
- Optional: Sprinkle grated lemon peel on top of the cake before second baking.
