Mussels W/ Chorizo, Tomato,Garlic, Basil And Wine
- About 1/2lb of mussels per person, cleaned and if there is a beard, remove and discard
- 1 to 2 links of Spanish style chorizo sausage, outer casing removed and diced into small pieces.
- 1 good size ripe tomato, skinned, seeded, dice small
- 1 tbsp of chopped fresh garlic
- 1 tbsp of chopped fresh basil
- juice of 1 lemon
- 1 cup of white wine
- 1 to 2 TBSP of butter(unsalted
- Heat a large saute pan over medium high heat and add in some saute oil. When the oil is hot add in the chorizo and stir for a minute, then add in the mussels, toss for a few seconds and then cover for a minute. Remove the cover and add in the tomatoes, garlic, lemon juice and wine and toss again and then cover for a couple minutes. When you remove the cover this time, you should start to see the mussels opening. Add in the basil now and the butter if your using it, toss again, and cover one last time for a minute or so, then check the mussels again and when all are opened, portion mussels into bowls, making sure to pour some of the broth over them. Serve with some crusty bread.
- Never eat mussels that do not open after cooking ,Throw away.
