Chocolate Banana Cake
- 3 extra ripe medium bananas, peeled
- 1/3 c. sugar
- 3 eggs
- 3 (1 oz. each) sq. unsweetened chocolate
- 1/2 c. shortening
- 1 Tbsp. rum extract
- 1 3/4 c. all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- Rum Fudge Frosting
- Slice bananas into blender.
- Puree until smooth (1 1/2 cups). In saucepan, combine 1/2 cup pureed bananas, 1/3 cup sugar, 1 egg and chocolate.
- Heat until chocolate melts.
- Cool.
- Cream remaining 1 cup sugar with shortening until light and fluffy.
- Add rum extract and remaining 2 eggs, one at a time, beating well after each.
- Combine dry ingredients.
- Beat with creamed mixture alternately with remaining bananas.
- Blend in chocolate mixture. Bake in 2 greased and floured 9-inch round cake pans in a 350u0b0 oven for 25 to 30 minutes until done.
- Cool 10 minutes in pan. Invert on wire rack to cool.
- Cut slice in top of cake.
- Put cut side up and frost with Rum Fudge.
- Frost sides and top.
- Garnish cake with banana slices.
- Makes 8 to 10 servings.
