Strawberry Filling
- 3 ounces Cream Cheese; softened
- 48 g Cane Sugar
- scant 1/2 teaspoon Vanilla Extract
- 1 pinch Salt; preferably Fleur de Sel
- 1/2 cup Heavy Whipping Cream
- 1/4 teaspoon Unflavored Gelatin
- 1/2 cup Fresh Strawberries; diced
- 5 g Freeze-Dried Strawberries
- Cook fresh strawberries down to a compote over medium heat and dissolve gelatin while still warm. Set aside.
- Grind freeze-dried strawerries to a fine powder in a food processor.
- Combine cream cheese, strawberry powder, sugar, salt and vanilla in a stand mixer and whip until fully combined and creamy. Check a small bit between your fingers to insure sugar crystals have "melted" into the mixture so there is no grittiness.
- Add cooled strawberry gelatin mixture and beat until incorporated.
- In a separate chilled bowl, whip heavy cream to stiff peaks. Fold in to cream cheese mixture and chill.
