Creamed Spinich
- 1 pound fresh spinich
- 3T unsalted butter
- 1/2 cup heavy cream
- 1/4 grated nutmeg
- 1/2t fresh ground black pepper
- 1 cup onion (chopped fine)
- 1T flour
- 2 medium cloves garlic (minced)
- 1/2 cup bread crumbs
- Clean spinich thoroughly; simmer in 1/4 cup boiling water until extremely tender (approx. 10 minutes).
- Drain spinich completely and allow to cool; chop to desired level.
- Melt 2T butter in large saute pan; add onion and garlic until slightly brown.
- Slowly stir in heavy cream, flour, and nutmet.
- Melt remaining butter slowly in small saute pan; mix in bread crumbs.
- When mixture is smooth and hot, add in spinich; toss over medium-low heat (approx. 3-5 minutes).
- Sprinkly bread crumb mixture over spinich mixture; serve immediately.
