Eggplant Parmesan Focaccia Burgers

  1. 1.Heat grill to medium high.Combine ground sirloin,garlic,basil,tomato paste,salt,red pepper and oregano and shape into 6 patties.Set aside on platter.
  2. 2.Brush eggplant slices with olive oil and salt and pepper.Using vegetable basket,grill eggplant until tender,set aside and cover with foil.
  3. 3.Brush rolls with olive oil.Set burger patties on grill,cook 5 minutes,turn and cook 5 minutes more.While burgers cook,heat pizza sauce on side burner in small saucepan.
  4. 4.Toast rolls around outside edges of grill,oil side down.When burgers are almost done,top with shredded parmesan cheese.
  5. 5.Top grilled rolls with burger,eggplant slices and pizza sauce.
