Shrimp Fra Diavolo

  1. 1. Saute onion until it softens and colors. Stir in garlic and cook for 30-60 seconds. Add oregano and wine and cook over high heat to reduce the wine by 1/3.
  2. 2. Add the tomatoes to the onion mix. Add the hot pepper to taste. Cook over medium heat to reduce and thicken mixture, 15-20 minutes.
  3. 3. Add the shrimp to the sauce and cook for 2-3 minutes, until the shrimp is cooked but still tender. Season with salt and pepper.
  4. 4. Serve oveer the linguine and sprinkle with chopped parsley.
