Shrimp Fra Diavolo
- 5 Tbs EVOO
- 1 Med Onion Chopped
- 3 Large garlic cloves, minced
- 1 Tbs Fresh Oregano, chopped
- 1/2 cup dry white wine
- 1 28oz can plum tomatoes, crushed by hand
- 1 tsp. Hot pepper flakes
- 1 lb linguine
- 2 lbs fresh shrimp
- salt/pepper to taste
- 1 Tbs chopped parskey
- Basil
- 1. Saute onion until it softens and colors. Stir in garlic and cook for 30-60 seconds. Add oregano and wine and cook over high heat to reduce the wine by 1/3.
- 2. Add the tomatoes to the onion mix. Add the hot pepper to taste. Cook over medium heat to reduce and thicken mixture, 15-20 minutes.
- 3. Add the shrimp to the sauce and cook for 2-3 minutes, until the shrimp is cooked but still tender. Season with salt and pepper.
- 4. Serve oveer the linguine and sprinkle with chopped parsley.
