Un-Fried Crabcakes
- 1 lb. minced imitation crabmeat
- 1 Tbsp. grated Parmesan cheese
- 1 Tbsp. chives
- 1 large egg or 2 egg whites, beaten
- 1 Tbsp. Old Bay seasoning
- 1 tsp. Italian seasoning
- 1 Tbsp. chopped mild or medium green chilies (canned)
- 1 tsp. baking powder
- 2 Tbsp. chopped parsley
- 1 tsp. Worcestershire sauce
- 1 c. unseasoned bread crumbs
- Spray lite vegetable oil cooking spray over baking sheet 3 times to coat well.
- In a large bowl, combine all remaining ingredients except 1/2 cup of bread crumbs and stir in crabmeat. Using 1/4 cup for each crabcake, form mixture into 8 cakes.
- (If mixture is too dry to hold together, add milk a tablespoon at a time.)
- Roll cakes in reserved bread crumbs and place on cookie sheet.
- Coat cakes lightly with oil spray.
- Bake on bottom shelf of oven 15 minutes, turning over once at 7 minutes.
