Un-Fried Crabcakes

  1. Spray lite vegetable oil cooking spray over baking sheet 3 times to coat well.
  2. In a large bowl, combine all remaining ingredients except 1/2 cup of bread crumbs and stir in crabmeat. Using 1/4 cup for each crabcake, form mixture into 8 cakes.
  3. (If mixture is too dry to hold together, add milk a tablespoon at a time.)
  4. Roll cakes in reserved bread crumbs and place on cookie sheet.
  5. Coat cakes lightly with oil spray.
  6. Bake on bottom shelf of oven 15 minutes, turning over once at 7 minutes.
