Healthy Chicken Cacciatore And Parmesan Potatoes
- For Chicken:
- 1 Whole chicken, broken down, boneless and skinless if possible
- 1 tablespoon olive oil
- 10 oz. Fresh mushrooms, sliced
- 1 small onion, diced
- 1/2 teaspoon dried oregano
- 5 cloves garlic, minced
- 28 oz. Can of petite diced tomatoes, with juice
- 2 tablespoons capers, with brine
- Salt and Pepper
- Heaps of grated Parmesan cheese
- For Potatoes:
- 5 potatoes, skin on, in chunks
- 1/2 cup milk
- 2 tablespoons olive oil
- 1/2 cup grated Parmesan cheese
- Salt and Pepper
- For Chicken:
- Season chicken with salt and pepper. Heat oil in a large skillet over high heat. Add chicken and cook until lightly browned on both sides, flipping just once. If you're working with a smaller pan, just do two batches. Remove chicken and set aside.
- Add mushrooms, onion, and oregano to the pan used to cook the chicken. Saute over medium heat until soft. Scrape up any bits left by the chicken. Add garlic, tomatoes, and capers and bring to simmer. Cook until sauce thickens a bit, about 10 minutes.
- Return chicken and juices to pan. Reduce heat to low and stew until cooked through, about 15 minutes. Do not let liquid boil. Season as needed. Serve over Parmesan mashed potatoes and garnish with heaps of Parmesan.
- For Potatoes:
- Cover potato chunks with cold water and bring to a boil. Season water liberally and boil until potatoes are fork-tender. Drain water. Add remaining ingredients and mashed to desired consistency.
