Easy White Bean Soup W/ Sage
- 2 teaspoons extra virgin olive oil
- 1 large onion, chopped
- 5 cloves garlic, minced
- 2 15-ounce cans great northern white beans
- 15 ounces water
- 1 vegetarian bouillon cube (If youAAAAAAre concerned about the amount of sodium, use half a bouillon cube instead.)
- 3 tablespoons fresh sage leaves, chopped
- Pepper, to taste
- Heat the oil and add onion and garlic. Cook until tender.
- Stir in beans with liquid and broth.
- Stir in sage and bring to a boil, stirring occasionally.
- Lower heat and simmer for 20 minutes or until beans are soft.
- Add pepper to taste.
