Bean And Bacon Stew By Gail Dawson

  1. Roast garlic head in foil with olive oil for about 30 -40 minutes.
  2. Saute diced onion and peppers in olive oil for about 5 minutes until soft and translucent.
  3. Add beans and tomatoes and heat slowly to allow flavors to blend. Squeeze garlic cloves into stew. Add the rest of the ingredients allowing their flavors to blend about 20 minutes.
  4. Serve hot.
