Cabbage Lasagna

  1. Saute turkey, onion, bell pepper and garlic in skillet sprayed with nonstick spray.
  2. Boil cabbage in water, covered, just until tender-crisp.
  3. Reserve 1 cup cabbage liquid and add with tomato paste, mushrooms, Italian seasoning, basil, parsley, red pepper, salt and pepper to meat mixture.
  4. Simmer 10 minutes.
  5. In a 9 x 9 x 2-inch square casserole, layer half meat mixture, drained cabbage and remaining meat mixture.
  6. Top with Mozzarella.
  7. Bake at 350u0b0 for about 20 minutes.
  8. Cut into 6 serving squares.
