Cabbage Lasagna
- 1 lb. ground turkey
- 1/4 c. chopped bell pepper
- 1 or 2 garlic cloves, chopped
- 2 c. water
- 1/2 tsp. sweet basil
- 1/4 tsp. crushed red peppers (optional)
- salt and pepper to taste
- 1 c. sliced fresh mushrooms
- 1/4 c. chopped onions
- 1 head green cabbage, chopped
- 1/2 tsp. Italian seasoning
- 1 tsp. dried parsley
- 1 (6 oz.) can tomato paste
- 6 oz. shredded Mozzarella cheese
- Saute turkey, onion, bell pepper and garlic in skillet sprayed with nonstick spray.
- Boil cabbage in water, covered, just until tender-crisp.
- Reserve 1 cup cabbage liquid and add with tomato paste, mushrooms, Italian seasoning, basil, parsley, red pepper, salt and pepper to meat mixture.
- Simmer 10 minutes.
- In a 9 x 9 x 2-inch square casserole, layer half meat mixture, drained cabbage and remaining meat mixture.
- Top with Mozzarella.
- Bake at 350u0b0 for about 20 minutes.
- Cut into 6 serving squares.
