Shrimp Scampi Over Linguine
- 2 lbs. large shrimp, deveined and cleaned
- 2 cloves garlic, chopped
- 1 medium onion, chopped
- olive oil
- dried oregano, basil, parsley
- Sliced fresh mushrooms
- pecorino romano cheese
- Italian flavored breadcrumbs
- Linguine - preferably a mix of spinach and regular flavored - 1 lb.
- Salt & pepper to taste
- fresh Parsley for garnish
- Sautee' garlic and onion in 2 tbl. olive oil, until onion is translucent. Add mushrooms and cook over med. heat for several minutes, until they are beginning to cook through. Toss in shrimp, and when shrimp are almost cooked, 2-3 minutes, sprinkle approx. 1/2 cup cheese (use finely grated powder, not fresh grated or it will get too stringy), 1/2 cup breadcrumbs, sprinkling of herbs, salt & pepper and sautee. Add more olive oil, to make a good base - you want it to have a good consistency. When shrimps are cooked through, remove from heat and serve on large platter over linguine, cooked to just al dente. Top with a sprinkle of cheese and parsley garnish, if desired.
