Dad'S Seven Layer Salad
- 1 small head iceberg lettuce
- a few nice spinach leaves
- 1 cup diced celery
- 4 eggs - hard boiled and sliced
- 1 10 oz pkg frozen peas - uncooked
- 1/2 cup green pepper - slivered
- 1 red onion - thinly sliced
- 8 slices crisp bacon
- 4 oz cheddar cheese - grated Red Pepper slivers for garnish
- 2 cups Mayo
- 2 tbsp. sugar
- tear lettuce into bite sized chunks, mix with spinach leaves.
- Put into deep bowl or 9X12" glass dish (glass is better, the salad looks great)
- add in order the celery, eggs, peas, green peppers, onion, and bacon.
- mix together the mayo and sugar, and "frost" the salad with the mixture, making sure there are no spaces between the salad and side of the dish.
- Top with cheese.
- Cover and refrigerate for 8-12 hours, before serving garnish with the red pepper slices
