Creamy Chipotle And Goat-Cheese Chicken
- 4 medium chicken breasts
- 1 medium onion, sliced
- 1/4 cup chipotles in adobo
- 2 large cans crushed or diced tomatoes
- 6 ounces goat cheese, plus 1 ounce
- Vegetable oil
- Salt and pepper
- In a heavy saucepan, heat oil. Add chicken breasts and cook until browned, about 2 to 3 minutes per side. Set aside.
- In same pan, cook onions until translucent, about 5 minutes. Do not brown.
- In a blender, combine tomatoes and chipotles with adobo sauce, blend until smooth.
- Return chicken to pan with onions and cover with tomato/chipotle sauce. Bring to a boil, then cover and simmer for 20 minutes. Add crumbled goat cheese and stir until combined. Cook for another 10 minutes, or until chicken is done (a toothpick yields clear juices) and the tomato/chipotle sauce has thickened. Add salt and pepper to taste.
- Serve with rice and top with a few crumbles of goat cheese.
