Brie Strata With Fruit Salsa
- For the Strata
- 4 T butter, softened
- 8-10 slice white bread, crusts removed
- 1 lb Brie, rind removed, cut in 1/2-inch dice
- 4 eggs
- 1 1/2 cups milk
- 1 t salt
- For the Salsa
- 1/4 cup minced red onion
- cayenne pepper or fresh minced jalepeno pepper, to taste
- 1 ripe pear, diced
- 1 c sliced strawberries
- 1 ripe peach, diced
- 1 ripe mango, diced
- 1 T honey
- 1 T fresh lime juice
- zest from one lime
- 1.tor the salsa, combine all ingredients and allow to marinate overnight.
- 2.tor the strata, oil a 9 X 13 pan or large tube pan. Butter bread on both sides and arrange one layer in the pan, then top with the brie. Continue to alternate until all the cheese has been used, ending with a layer of bread.
- 3.tn a medium bowl, whisk the eggs with the milk and salt. Pour the egg mixture over the bread. Cover and refrigerate overnight.
- The Next Day
- 4.temove the salsa from the refrigerator and allow to come to room temperature.
- 5.temove the strata from the refrigerator 30 minutes before baking. Sprinkle with paprika and preheat the oven to 375u0b0. Bake until the top is golden brown, about 35 to 40 minutes. To serve, cut into squares or wedges and serve with the salsa.
