Super Soft Whole Wheat Banana Raisin Muffins
- 1C smashed banana (I typically use two bananas) - use a potato masher so you have some lumps
- 2 eggs beaten
- 1/2 C natural unsweetened apple sauce
- Mix this all together in a medium bowl.
- 1C whole wheat four
- 3/4C white flour
- 3/4C brown sugar
- 1t baking powder (I use a slightly heaping teaspoon)
- 3/4t salt
- 1/2t baking soda
- Cinnamon to taste
- About 1/2C of raisins
- Whisk this together in a large bowl - breaking up the brown sugar.
- Add the wet ingredients to the dry in the larger bowl and mix until incorporated fully. Fill 12 muffin cups lined with papers. Sprinkle some demerara sugar ("sugar in the raw") on top to give them a bit of crunch. Bake at 350 for 20 minutes. They are even better the next day.
- For another variation, consider leaving out the raisins and using some coconut and pecans with the banana to make a tropical muffin. Mmmm!!
