Grilled Marinated Chicken
- 3 skinned, boned chicken breasts, split
- 1 envelope Italian salad dressing mix
- 1/4 c. olive oil or salad oil
- 1 pkg. (10 oz.) frozen broccoli spears, thawed
- 1 large red bell pepper, cut into 6 wedges
- romaine lettuce
- 3 Tbsp. lemon juice (optional)
- freshly ground pepper (optional)
- Place chicken breasts in shallow pan.
- Combine salad dressing mix and oil.
- Pour over chicken breasts; toss to coat well.
- Cover; refrigerate at least 1 hour.
- Place chicken on greased grill over glowing coals.
- Grill, uncovered, 15 to 20 minutes or until chicken is tender, brushing frequently with marinade.
- Remove from grill. Place vegetables on grill; turn frequently until just crisp, about 3 minutes.
- Place romaine lettuce on serving platter.
- Arrange chicken breasts on lettuce with broccoli and peppers.
- Sprinkle with lemon juice and pepper if desired.
- Makes 6 servings.
