Anis Christmas Cookies
- 1 pound margarine, melted. ( I use half butter)
- 2 1/2 cups white sugar
- 4 eggs
- 1 1/2 cups buttermilk
- 1 tsp. lemon extract (I use 2 tsp.)
- 1 1/2 tsp. soda
- 1 tsp. baking powder
- 1 tsp. anise oil (I use 2 tsp.)
- 7 cups flour
- Icing
- 1/2 softened butter
- 4 cups powdered sugar, sifted
- 4 Tbsp. cream (I use milk)
- 1/4 tsp. salt
- 2 tsp. vanilla
- Sift dry ingredients in a very large mixing bowl. Add remaining ingredients and stir just to moisten. Don't over mix. Dough will be a little wet. Roll on a lightly floured board. Don't roll too thin about 1/4in. Bake at 400 degrees for 8-10 minutes. DO NOT BROWN!
- Icing
- Cream the butter and sugar. Than add the rest of the ingredients.
