Volcano Salad
- 4 chicken breasts
- 1 c. diced celery
- 2 c. uncooked rice (Minute rice)
- 2 (16 oz.) cans chicken broth
- onion powder, garlic powder, salt and pepper to taste
- cornstarch (to thicken broth)
- 1 small can crushed pineapple
- 1 small onion, chopped and diced
- 1 can La Choy chow mein noodles
- 1 c. coconut
- 1/2 to 1 c. sunflower kernels
- Prepare chicken by boiling it and debone and dice.
- Cool chicken.
- Thicken broth with cornstarch.
- Prepare rest of ingredients into individual bowls.
- Prepare the rice.
- It takes about 5 minutes.
- Place on plate in following order:
- rice, chicken, gravy, pineapple, onion, celery, sunflower kernels, coconut, chow mein noodles and gravy again.
